Ingredients

260g pizza dough

½ cup (100g) tomato sauce (???)

½ cup (50g) Castelvetrano olives, pitted and sliced

1 clove (3g) garlic, sliced

¼ cup extra virgin olive oil

2 teaspoons chili flakes

Prep

Slice the olives into thin ¼” slices (about 3-4 slices per olive). Slice the garlic as thin as you can with a mandolin or sharp knife. Set both aside and reserve.

In a small sauce pan, gently heat the olive oil over medium heat and add the chili flakes. Cook for 30 seconds or until you can start to smell the chilis, be careful not to overheat and burn them. Turn off the heat and add the olives to the chili oil. Set aside and allow the olives to marinate for at least 20 minutes. Reserve.
